And today we are going to learn how to make apricot jam
The first thing to do is to take the apricots from the tree
As always they are hidden between the leaves
And this is the apricot tree that i have in my home
The apricots look like this
Is a small fruit
is sweet, very similar to a peach
As you see we take out a lot of fruit.
As in all the recipes we need to wash well our fruit
Because the fruit is in direct contact with birds, and bugs, and spiders and all the living beings that we don't want in our jam
Once we have our apricots well washed
We are going to cut them in half
And take out the seed
We need a knife, a trash bag, a food weigh,
and a bowl to weight the apricots and sugar
And obviously a pot, a big pot
So we are going to weight the same amount of apricot and sugar
If you want to make jam
With one kilo of apricot, i should have 1 kilo of sugar
If you want to do it with two kilos, you need two kilos of sugar
In this big pot we put one layer of two kilos of apricot
with two kilos of sugar, and so on till we complete it
You should never fill the pot
Because the jam could rise and you will end with a big mess
And this is how it looks before we put it on the fire
After this we put in a big kitchenette
Now we need patience
Because the amount of jam is big, and we need to cook it for one and a half hour to 2 hours with low fire
A little secret is to put some of the seed to the jam, so it thickens
After the time has passed, we are going to put it in jars
We need to clean well the jar of any rest of jam so it closes well
This jars are hot, hotter than boiling water, you CAN burn yourself, so be careful
You can't taste it or you will burn your tongue
We wash our pot, and put a cloth in the bottom and put water in it
This is we are going to do so the jars keep closed well, and it doesn't contaminate with any microorganism
We let this boil for 10 minutes
And then you take it out carefully and let them cool over night
