Obra comentada: "María Isabel de Braganza, reina de España"José Álvarez Cubero - Duration: 6:34.I've chosen this work for three reasons.
Firstly, for the subject depicted,
secondly for the circumstances of its creation,
and finally due to the restoration undertaken on it.
With regard to the subject, this is Isabel de Braganza, Queen Consort of Spain.
She was the second of Ferdinand VII's four wives.
She was the daughter of the King and Queen of Portugal and arrived at the Spanish court
after Ferdinand's first wife died without an heir.
You could say that there was some hurry in finding him another wife
to provide him with heirs and she was the one chosen.
It was all a rather hasty business: she was Ferdinand VII's niece, she arrived at court without a dowry
and it seems she wasn't a particularly attractive woman.
The people of Madrid didn't exactly welcome her with open arms.
A number of popular songs were written on her arrival, one of which includes the chorus:
"Poor, ugly and Portuguese."
In fact, Isabel had considerably more qualities than that.
She was a cultured woman with a profound interest in the fine arts.
In fact, she was a painter and on her arrival in Spain she was made an honorary member
of the Real Academia de San Fernando.
Why is she so special?
In history in general, women always seem to occupy a secondary role
and the same is true for the creation of this museum.
Among the women who played the most important roles was Isabel de Braganza.
A number of authors, including Madrazo and Barón, have said that she was in fact
the person who suggested to Ferdinand VII that he create a museum; the one we now call the Museo del Prado,
known at that date as the Real Museo de Pintura y Escultura, due to the fact that she was so impressed
by the King's art collections when she arrived in Spain.
The Museum first opened in 1819 but Isabel had died in December 1818.
So she never saw her great work.
This is a posthumous portrait.
The poor woman arrived here aged nineteen and died in childbirth two years later.
Her husband commissioned this portrait in 1825 after she had been dead for seven years.
The work was finished in 1827, although not entirely as the artist Álvarez Cubero died before
he could complete it.
It is finished with regard to the forms, volumes and all the sculptural details
but the polishing of the surface was not finished, as you can clearly see on this side.
There are numerous tool marks visible on the arm.
For a 19th-century work and a work by this artist, of whom we have a large number,
this sculpture ought to have a very highly polished surface, very highly finished,
and if you look you can see a texture that is quite out of keeping with works of this type.
So, what happened?
The sculpture was waxed.
If any of you have a piece of furniture that's been waxed at home
you'll know that wax has a sort of residual adhesiveness.
Dust gradually fell on it and it was given another coating of wax on top to re-polish it.
The result was the build-up of a thick coat of varnish.
When you looked at this sculpture it was difficult to see that it was white marble.
It had a very brownish, orangeish, dirty look.
The first thing we did with regard to the restoration was to clean it
in order to remove all these layers, all these substances that weren't part

of the sculpture, and also remove all the dirt trapped between the layers.
To remove the layers of varnish we used solvents and mixtures of organic solvents that are applied by
swabbing with a piece of cotton wool soaked in the mixture.
This cotton wool is gradually removed as the varnish
that we want to get rid of dissolves without affecting the layers underneath.
When we reached the layers of wax, that solution was not sufficiently effective and we had to use
other mixtures of solvents.
In this case we used gels, in other words we turned the mixture into a gel which we could leave on the surface
so that it acted for longer, softening the layers of hardened wax.
The work improved considerably but the stone still had a rather greyish appearance
due to that initial layer of dirt which had penetrated into the porous body of the stone.
This had been assisted by the different textures, cracks and other gaps
which meant that the dirt had penetrated and got stuck.
We had to find a solution as the chemical solvents didn't work.
The third reason why this work is important is that it is the first
from the Museo del Prado's sculpture collection to be cleaned with laser technology.
There have been others since, but this was the first.
The laser used for cleaning stone is a monochromatic laser
with infra-red light which works on the principle of energy absorption difference.
In restoration, cleaning is always selective and we first removed the varnish.
Then we removed the layers of wax and finally worked on the incrusted dirt.
The equipment we use has an output device that fires a small circular beam of 4mm diameter,
so you have to go over the entire surface with it, meaning that it was very laborious.
We left an area on the back to show how dirty the sculpture was before we applied the laser,
in other words, after we had removed the layers of varnish and wax, and it was this grey.
Thanks to that, we can now see it in all its splendour and with its correct chromatic range.

Welcome back
Today we are going to be talking about something a little bit different
I know I get lots of questions as I've been teaching for so many years
in studios and universities, advice for dancers
Of course everyone wants to know - how do I move on in my career
or how do I become a professional dancer
and that is something that maybe I have had a lot of experience in
in terms of going through the process and mentoring so many people who have gone through that process
So I'm going to give you my ideas on certain things you can look for
and certain things you can plan for
and hopefully that's going to get you to where you want to be.
So this is going to be good advice for young dancers
and young jazz dancers in particular
The first thing I think you need to do is to take a good hard look at
yourself, because the business is a rough business.
as you surely know there is a tremendous amount of competition
you can go for a job in a Broadway show, they need 5 people, and there's 300 people there to audition
how are you going to be the best person
Finding out who you are, what your level is,
and how you are going to compete is the first thing you want to judge
So the first thing you really need to look at yourself and really say
What is MY talent.
What is my talent for this thing that I am doing and does it match up with what my dream is?
It may be something that, yes, you are talented, you have the flexibility
you have the coordination, you have the natural attributes I think is what I am talking about here
That's going to enable you or at least give you the chance to make a go at it
You need to be serious. You need to really take good stock of yourself
and think of what you are working with.
If you want to be in a professional ballet company and your feet are not just up to what you need to be
in terms of pointe work, that's something you need to think of
It may not be that you are going to get to that certain level you were hoping for
but maybe there is a different level that will be more suitable.
So first thing is to really look at your level of talent.
as you compare yourself to other people, and what that goal is that you want to be.
And it's not that everyone has to be fully talented as possible
because HOW you work with your talent is definitely important
But there just needs to be a really honest assessment of where am I at,
and do I realistically have the natural attributes that will be needed
to be successful in this career.
So that's the first thing you want to look at from a younger age
The second thing which is kind of going from the initial part of what I just said
the talent - is to the end part - of Vision
So you are looking at the bookends
Where do you want to be? What is your "vision" for yourself?
What do you hope to be? What is that big long term goal that really going to satisfy you?
You need to not only just have a basic idea - "I want to dance on Broadway"
"I want to be in a company"
That's very nebulous, very generic
You need to make it much more specific as to who you want to be
what type of dancer you want to be, at what level you want to be dancing at
what is your "vision"
If you can define exactly what that vision is, where you say where you might be when you are 25 years old
In every aspect of what that can be, then you can devise the necessary plan to make that happen
So don't just say I want to be a Broadway dancer
Say "I want to be a Broadway dancer who excels in ballet as my foremost activity,
I'm also trained in jazz and tap, I sing at this level
I'm taking acting lessons, I know this variety of shows that are the right shows for me
that suit exactly who my type is, et cetera.
This is the field, these are all the people who are involved in the field
I know the big players..."
You need to define that whole aspect so that you can "OK, where am I now and where do I want to be."
So really sit down, look at what's out there, and define your vision
and know that your vision may change as you go along
what you know now at 16 years old may not be what you are going to say when you are 23 or 24
So your vision is a very important thing, of who you want to be
Going along with that is "knowing the field"
Every form of dance is going to have a field
whether it's modern, contemporary, tap dance
ballet, you know, there is a genre of people who are the big hitters in that field
Who are those people? Who are the big companies,
what is the history, what are the big choreographies that you should know about
How did this field develop, it didn't just come out of thin air?
If its had a 60 or 70 year development like jazz dance
or even a little bit longer like modern dance
you need to know all of those aspects to be a fully informed person
which means you are going to need to do research
and by research I mean, of course there is the Internet
it's great, you want to Google everything, but that is not everything
You need to go to a LIBRARY, you need to check out a BOOK
books will be much more in depth, much more of what we call critical analysis
of what your field will be. so that's a basic thing
you need to know what is that field, you can't
enter it and say I want to be in a certain level of Broadway performance
and meanwhile you only know shows from the last ten years
That is not something that is going to be working for you
You don't want that to happen
OK, know your field
After that, once you have your talent assessed and your vision of what you want to be
you know what the field is, then you want to work on of course
What is my PLAN?
How do I develop myself? Where am I going to take my classes?
How am I going to improve myself so that I have those skills.
and there are certainly so many things that you can choose from
whether it's your local studio that you are working with
do you want to go to college, do you want to bypass college and go straight to a major city
like New York or Chicago or L.A.
How do you want to make all of these things happen?
You have a certain amount of time to prepare.
You have a certain amount of time to make yourself ready.
for what you need to do
So that time has to be very well spent.
So figure exactly what your plan is and how to do it.
I do want to give you a couple of tips that I've found in terms of making yourself better
one of them is "how" you practice
how you practice "to get better"
I know in terms of taking dance classes, you take as many classes as is possible in a week
OK, that's great, well that's a group class
So you are in a class, you are doing what everyone is doing
and you are working for yourself as much as possible
But what you also need to do is work on yourself
at your own time.
and one thing I've found is that students will take so many classes per week
and then once the class is over it's as if it goes out of their head.
They don't think about what they did in that class ever again
because they are thinking, OK tomorrow I have my next class
A really important thing to do is take something that was maybe a troublesome thing for you in the class
or something you need to work on, or something you want to explore a bit more
and find your OWN time to practice
Practice on your own.And I know it's tough finding a studio space
but find some where where you can do it, But
if you take, say, from your two ballet and two jazz classes per week
there are probably FOUR things you can work on
at some point during the week, 2 to 3 times a week
find "your own" time, work on those things on your own
just go through a combination and really feel every aspect of the combination
every position, every full stretch
take your time and really fully explore it
That's what I call "self exploration"
so that you are working "your self" at your own pace,
making your self go through that process
That is much different than being in a group class where there is a general correction given
and it's sort of for everybody
and not for you in particular
So learning for yourself and taking yourself through the process
is really, really, an important thing to do in terms of
making yourself as good as possibly can be
I would definitely stress finding time to practice on your own
on a weekly basis in addition to taking your classes
The second thing is trying to find private lessons
of course private lessons are extremely expensive
But if your goal is that you want to be a professional...
this is what's going to help you get there
You need one on one time with someone who is a total professional
and a total "mentor" to you
not to take "one" private class, but to try to take private classes
for a longer period of time
maybe a year, maybe even longer
with somebody who's REALLY in the know
somebody who can really help you, because
they are going to take their professionalism and
instill it in you at your younger age
that's what you want to do, you want to get to that level of what that person is
even if you can only afford a private lesson once a month
OK, that's it, but try to get as much as you can out of it
and then go back to your own personal practice
and work on that as much as possible
so just remember that group classes are great
but that is not the only way to learn
private instruction and self-directed instruction is going to be
very important for you to find where your direction is
and to improve yourself as a dancer as much as possible
Next thing I want to talk about is DRIVE
OK, you need to want it....
Dance is a very tough business, not a well paid business,
You've got to want this and you need to say to yourself
I'm going to put in all of my resources, all of my time, all of my effort
If you do it halfway, you are not going to get there.
Unless you were so, so super talented that it would just happen for you but
that's like extremely rare that something like that would happen
So, I call this the "ruthless devotion to achieving your vision"
RUTHLESS DEVOTION - every day
every class...every spare moment that you have you are devoting it to
reading books, learning more about your field,
learning more about the people, watching great dancers on video and
trying to assimilate those qualities into your dancing
You have to be on it every day, day after day after day
If you just take two classes a week, you know, Tuesday Thursday
and you don't think about dance again until Tuesday rolls around
No, it's not going to be there, it's going to fall back
you need to find time to be on it ALL of the time
because if it's your profession...
you need to be at that level of how well you have invested yourself
in terms of trying to be that type of person you want to be
So "Perseverance" is the key
Perseverance not over a short amount of time
not over three months...I'm talking perseverance over three, five, seven years
That sort of perseverance is what's going to get you to where you want to be
so DRIVE is a very important thing, and I'm going to go back and match that with TALENT
Someone may be so much more talented than you, you look at another dancer in class
they have so much talent...OK, that doesn't mean you DON'T have it
Maybe they have a lot, but how you DEVELOP your talent goes with the DRIVE
Sometimes you can see very talented people and they just don't know how to work because
things come easy to them
So actually their progress is minimal, they are sort of where their natural level of ability is
I've always said that a great dancer is somebody who's got talent
but not TOO much talent, but they have a tremendous amount of DRIVE
and they know how to develop their talent because they know how to work that hard at it to make it happen
So DRIVE and PERSEVERANCE over time is going to be an important thing for you

Japanese Food in Bangkok - NO TOFU, NO LIFE - World's First TOFU OMAKASE Experience! - Duration: 19:34.- Hey everyone, I hope you're having an amazing day.
It's Mark Wiens.
I am in Bangkok, Thailand.
And tonight for dinner,
my friend P'Tan invited me over to Mihara Tofuten,
Thailand's first all tofu omakase.
So it's dish by dish, piece by piece chef's table.
And this will be a totally new dining experience.
(upbeat music)
No tofu, no life.
(upbeat music)
When you step in,
to this little, this little courtyard,
it's like a little Japanese oasis.
So outside of the door it's Bangkok.
Inside the door you really do feel like you're in Japan.
The little garden.
(upbeat music)
(greeting in a foreign language)
- [Server] It's roasted tea.
It's nice and naughty.
It's got little flavor
almost like iron, a little bloody minerality.
Very nice to get the palette going.
- [Mark] Welcome tea, and this is a,
it helps as it cleanse the palette.
(light upbeat music)
Kind of has a bitter aroma to it.
You can taste the roasted flavor,
but it's very, very light.
Very light tasting.
(Japanese music)
- [Mark] 15 dishes?
- [Server] Yes.
- [Mark] Okay.
When the drink is ready,
we're going to start to serve the food.
Enjoy.
- Any meal that you can see
where the food is being prepared,
and then it is served to you course aby course.
As always that adds
another dimension of an eating experience.
It's going to be the tofu tasting course.
There are 15 different dishes.
So 15 dishes all including tofu.
And I ordered some tea.
- And there's some
- Oh, that's your tea.
(both laughing)
- Yes, thank you.
- Okay, my tea is still on its way.
- Would you like to hear a little bit
about it first of all?
- [Mark] Yes, please. - Yeah?
- [Server] We are starting off with a oolong from Yaman,
a beautiful little prefecture
with some of the cleanest air in Japan.
Which for me, really,
is one of the most important things, frankly.
We don't wash away the first flush
like we would with Chinese tea.
(upbeat music)
- Wow it's like very, very,
green tasting.
Almost like,
almost has like a sea
taste to it, to me.
The first course is fresh homemade tofu.
Something I just learn right now
that she mentioned to us is that even the water
is brought from Japan.
The water comes from the,
as that has a big impact
on the taste.
- [Chef] It's from Saga. Saga.
- [Mark] Saga?
- [Chef] Yes, near Fukuoka, by the way.
- [Mark] Near Fukuoka - Yep.
- [Mark] And that's where the tofu,
command recipes come from here, right?
- [Chef] Of course.
- [Mark] Wow, that texture.
(chill beats)
That is so delicate.
You just kind of chew a couple times
and it just slides down
kind of like almost liquefies.
And then she unwraps the napkin
and there will be these little boxes inside
filled with delicacies.
So there is a three cart course.
(speaking foreign language)
- [Mark] I guess so.
I think I'll just put on the sauce.
- [Ying] You have to mix this a little bit
- [Mark] Oh yeah.
A little bit of sauce.
And then, that almost feels like a mozzarella.
I should use this spoon (laughs).
Yeah that's a good call, Ying, thanks.
That really does almost taste like mozzarella.
Like a fresh mozzarella.
That is amazing, I cannot believe that almost tastes like,
it really almost taste like mozzarella.
(both laughing)
I was about to come in with my spoon.
And I just like slid right up.
Sorry about that.
I had a little tofu splatter accident.
Tuna with the skin.
The yuba.
(speaking foreign language)
That's almost like a thin slice of cheese.
(chill beats)
It's just like
a world of different texture.
(speaking foreign language)
- [Mark] And then, yeah, I think this
you got to pick this up with your fingers.
Good, I got to see the menu.
What was that?
- [Server] Okara chips.
Chili con carne.
- [Mark] I was gonna say,
Okay, chili con carne.
It almost has a Mexican taste to it.
(upbeat music)
- [Server] It's our zuwai crab soup.
The crab is from Hokkaido, with a really light dashi.
- Okay, so I am also having a tea pairing
which is also very cool with this meal
because the food and then the tea
which is just gonna to complement of this samaliase.
like deciding and really like,
thoughtfully thinking about the tea
and how it'll pair with the dish.
We've got like a black tea here,
and then this is one of the, our waiter explained that,
this is one of the most umami dishes,
edamame ball,
which is a soybean ball,
and yuki tofu and dashi soup with zuwai crab.
Should this be eaten with a spoon, or the,
- [Ying] Eat with spoon.
- [Mark] Sure? - [Ying] Yeah.
- [Mark] Even with this?
- [Ying] You have to try your soup first, though.
- [Mark] Look at that. Okay I've got to try that first.
Oh man, that looks awesome.
Just feeling from the chopsticks can just feel
that incredible textures.
Soft and stuple.
Actually your chopsticks is kind of like fall through it.
Oh yeah, just breaks up.
Look at that.
(upbeat music)
That's like, whoa.
It's like unbelievably silky.
Spoon delicate.
'Cause it just sort of dissolves.
Okay, let's try that.
That ball.
(upbeat music)
It's so neutral tasting.
But at the same time,
you can taste the individual ingredients.
So I can taste the soybeans.
And then you taste that fragrance
of the slightly smoky crab,
an augment wrapped up in like 12 different textures
in your mouth all at the same time.
That's just like pure strands of crab.
It's the tea that goes with that.
(sniffing)
Almost like smoky cinnamon aroma to it.
Whoa. I really like smoky taste to it.
That's awesome.
- [Server] So we're going to go to,
we're going to taste the silver needles.
Exquisite and quite rare tea,
in the jasmine style.
Very very floral and delicate style of white tea.
It can be served hot, it can be served cold.
We did a cold extraction
and serving it cold on ice for you.
- [Mark] Okay the next course is tofu shirae melon gazpacho.
I am not sure it is meant to be a one biter,
but I originally try to get it on my,
balanced it on my chopsticks but, nope,
and a small spoon,
then chef came over and gave me a big spoon.
Now, there we go.
It's wobbly.
Cucumbers and carrots.
Which kind of burst out of the jelly foundation.
White tea with this course.
(chill beats)
- [Mark] Okay it tasted like some jasmine to it.
Kind of floral.
(upbeat music)
Ying thought this one was the best so far.
She already finished it.
(Ying laughs)
Kabayaki style grilled saury fish.
How do you eat it, Ying?
Did you like slice it in half? - [Ying] Nope I basically...
- [Mark] Can I just, curl up, okay, like that little rollup
But as soon as you do that you can see kind of like
the fat squeezing out,
Yeah, let me just,
you can just see the fat in there.
(upbeat music)
- [Ying] Eel, eel, eel, eel, eel, eel, ell, (laughs)
- Kind of like eel.
Not as fatty as eel, but yeah it's pretty fatty.
But that's what makes it so juicy and so incredibly good
like belly fish tasting and then roasted.
(plate squeaking)
A momen tofu
which she explained as a kind of a harder, a firmer tofu.
Like a aubergine eggplant cup.
And then like a yuzu, kind of like a citrus sauce.
(upbeat music)
That's awesome.
Bite into that.
And the tofu just kind of like juices.
So good.
(Ying laughs)
That's like, almost the texture of tofu.
Next dish is zaru tofu,
and Zaru, because it's cooked in oil,
prepared in a bamboo,
the tofu is made in a bamboo basket.
But then it's fried.
It almost looks like a little muffin or scone.
Firmer than I expected.
It's not like a wobbly, wobbly tofu.
May be because of that skin as well.
But I do want to get that seasoning as well.
(chill beats)
Explosion of tofu.
I like that because the ikura,
the roes,
they explode with that saltiness.
Which contrasts the delicateness of the tofu.
(upbeat music)
That just kind of like, brings out the flavor.
Okay, I am excited to try that tea.
(upbeat music)
By the way he said it was a very umami tea,
a very meaty taste.
I do taste the meatiness of it.
And it has a thick texture to it.
- [Server] Would you like me to mix it for you?
Or would you like to do it yourself?
(upbeat music)
- [Mark] Let me try that in one sec.
- [Server] Yuko was like why are you wasting all the leafs?
And I was like what do you mean wasting?
It's not done yet.
- You can actually eat the tea leafs.
So you mix in a little bit of soy sauce.
I have had like fermented or pickled tea leafs salad
but this is a totally different experience.
And this is like totally different.
That's delicious.
A bitterness but a bitterness that doesn't like
go past your tongue.
So you just taste the bitterness on the surface.
Like oceany tasting.
You taste almost the soil.
The donburi is almost like a rice ball.
But it's like a rice ball puff.
With yuba, the tofu or bean curd skin,
and abalone, she said,
I think, she said abalone liver in there.
But you can also see the roe on top
and that one looks very...
like you don't know what texture
or what even temperature
it's gonna be,
just from looking at it.
Again, everything's subtle.
Oh, I think like the rice.
I missed the rice on that.
But then it just fell out of that abalone wrap.
- Try this
- [Mark] This one she just hands it to you
and you just gotto take it in your hand
in a little origami wrapper.
But it's a tofu, deep-fried tofu like nugget.
Oh it's hot.
SO like delicate and just like dissolve in your mouth.
And then you got the strands of scallops in it.
That's what it is, scallop.
And it is a blue cheese soy dressing.
You taste that blue cheese,
soy milk, kind of like whipped soy milk almost.
Oh I got a lot of blue cheese on that one.
It's vinegar seaweed
with yuba, bean curd on top.
So may be get a little bit of everything
It's often how you can feel the texture in your chopsticks
before you eat them.
But this one you can tell it's gonna be a little slimy-ish.
Just look at the strands of it.
(chill beats)
This one's one of those things
that you want to just slurp up
immediately crunch to it.
like a seaweed,
and then a very delicate vinegary sourness to it.
(upbeat music)
- [Server] Here's a sukiyaki experience.
The soup is actually inspired by a french onion soup.
And we have grade A wagyu from Hokkaido,
served with momen tofu and cognac.
We'll have the chef cook it for you in about four minute.
- [Mark] Okay, great.
(laughs)
- Good.
(all laughing)
- It's one of the courses
that I was most looking forward to.
This is the sukiyaki,
created by Chef Goh.
It's a french onion soup stock.
Really smell that oniony aroma as he was cooking it.
It was boiling thin and like wrinkly.
(laughs)
Whoa.
Melt in your mouth beef.
Not too salty.
Really not too salty at all.
A slight, a hint of sweetness.
Wagyu beef.
Whoa.
(chill beats)
You can chew it with you lips.
Re-submerge, go back to the beef,
and let that just keep on marinating in there.
You have beef.
(upbeat music)
So the next course is somen,
which are noodles but I didn't even know where they were.
I didn't see them slip the noodles into this,
this soy milk,
dashi stock.
or like but it's cold
yeah, like a, its milky, it looks like milk.
Almost looks scuff.
It's soy milk, soy milk dashi.
Be easy on the slurping.
The texture of those noodles.
That's awesome.
Perfect simplicity right there.
The tempura, into the milk, it's all submerge.
(chill beats)
Amazing.
Okay I have this small pickle.
Give that a little stir.
There're sesame seeds in there as well.
(chill beats)
That bumps up the flavor.
Sesame, roasted sesame taste.
(upbeat music)
That's amazing.
That's amazing.

- [Mark] Moving onto dessert.
I think this is the final course.
And then everything again is with tofu.
So like every single course, I mean,
every single bite had tofu in it.
So this is the soy milk ice cream gelato, it is.
Oh that's great because it's not too sweet.
And then it just has that again like,
roasted soy milk taste to it.
Four different flavors, all again made with soy milk.
This one must be the macha.
I believe this is the macha.
Whoa.
- [Ying] Mmmmmm (laughs).
Happy day at all
- [Mark] Next time your plate is already clear (laughs).
That texture is unbelievable. (Ying laughing)
That's like the silkiest, but like dense and silkiest thing,
may be ever.
It's like fudge.
That's like soy milk fudge.
Pistachio.
I'm not a desserts guy.
But this is one of the best desserts may be ever.
- [Ying] Are they gonna keep up?
- All the chocolate one at the end.
- He brought in like, all the milk--
- [Mark] It's like, okay, okay.
(all laughing)
Okay we ended up talking for a little bit
because the next dessert is still coming but,
how do you pronounce it, Ying?
- [Ying] Im mee - [Mark] Im mee
And we are waiting on one more dessert.
- [Server] Okay. - This is the I'Tung special.
(laughs)
And it's like what, is this one?
- It's a mochi. - A mochi? Okay.
Made of tofu?
- Tofu mochi.
- Okay
- With the tofu powder.
- Awesome.
Wow, that texture.
- [Ying] May I take one bite?
- [Mark] No I don't think you can, oh the skewer
I'll take this guy.
We get that giggliness.
Wow
That texture.
This whole night,
has been about textures
and that is a totally different texture
from anything so far.
It feels the way you think a jelly fish looks.
Kind of like flopping around a little bit.
(upbeat music)
We ended up just hanging out and talking with Khun Tan
and Khun Tap for a couple of hours.
That was so much fun.
Yeah thank you for the awesome dinner
and okay I better turn on the car and roll down the window
'cause it's already getting hot
Bangkok style.
(car engine revving)
I didn't really know what to expect
I mean all I knew was it's going to be a 15 courses,
or many courses of tofu.
But hearing about the entire story and Khun Tan,
I mean, he explained things throughout the meal
as well so it's great to have him there.
But it was one of the purest, may be like,
I mean I wouldn't call the food simple,
but the flavors were not strong.
But they were like completely new flavors for me
that just well-rounded umami,
you could actually taste the pure umami.

hi guys today we are going to be discussing a
topic which I don't think you've exactly been clamoring for but I'm sure you saw
where this was going that's right we are gonna be talking
about Bollywood stars and the work that they may or may not have done and this
is I mean I've been a huge fan since I was a kid I know you've been quite a fan
as well in your in your own right you've been to India I have saris you were
almost obligatory dancing girls one of the movies none of that is true I'm not
exactly a happy India but I don't think I've seen my fair share of Bollywood
films so when I thought this was a good idea I did have to take most of my
inspiration from you but certainly from the pictures that I've seen of the stars
that we're gonna comment on I gotta say they look amazing I mean this is a
multi-million dollar industry this is I mean India's known for like two main
passions one is cricket and the other is movies so the film industry is huge out
there it's a place where social topics are discussed and the music industry
comes from within the industry the actors actors and actresses and not just
vehicles for the stories but in themselves they will look stunning they
look absolutely stunning some of these things that we've been talking about in
terms of aesthetic proportions when we're going to look at these people's
faces you can see that the phi concept the Fibonacci principle is all reflected
in there so certainly with regards to some of the
other videos that I did looking at more Hollywood celebrities I'd say that
there's a difference in the two so in these Indian celebrities the
Bollywood celebrities that we're going to be referencing their work is
immaculate soon absolutely undetectable I mean I agree and Sarah I think this is
the thing this is the key thing I think from the beginning we've got to say that
we actually had known nothing about whether any of these stars categorically
have had any treatment done however
I think if they have had any work done I think this is important to say from the
outset they work is impeccable yeah it's great understanding greater they're just
preserved not frozen they're not they're not deformed I mean the people were
going to discuss our examples are fantastic but I've got to say Sarah you
know one thing and I in our favor is that beige don't age people's Oh before
we move on and we were talking about the celebrity doctor that they have over
there energy you named a couple of them do you know I'm like like yourself we go
to all sorts of esthetics conferences we go to dermatology training and there's
two that I've heard of and one though I've seen actually at one of the
conference's her name's Mukhtar Sajdev another lady I've heard about is jamming
our pie they're both renowned dermatologists in India and they were
and they're both also famous for carrying out non-invasive injectable
treatments peels laser therapies and these are really developing at a huge
huge rate in India now so I remember you and me went to see that particular
doctor lecture in Barcelona who talked about avoiding complications I think you
remember who I talk to
yeah I mean you could do the voice I can't do I think we'll leave the voice
okay that's another time yeah okay so let's go straight on to our first lady
leading lady Madhuri who is a lady I believe you have met yeah I met him in
2000 she's obviously not gonna remember me but me and my family we we sort of we
stalked her she ended up on a film set and met her in 2000 I've got no idea
what age she was but I've got to tell you looking at these pictures and
looking at the film I saw recently where she plays a 40 year old housewife she
looks the same as some great security they've got on that set isn't it amazing
but yeah I feel exactly the same thing when I saw the pictures o-m-g
maintenance it's the main chance that she's undergone because her skin it just
looks absolutely your looks amazing got to say when I was
a kid she was known for having quite poor skin yeah so either I mean another
thing she's married to a very famous doctor now and I'm just assuming that
she's had the best that's available in terms of dermatology in terms of
whatever treatment you know she may or may not have had she's able to access
the best that the best that one could have so her skin I'm not surprised is
glowing and radiant I think they've done a great job with her so some of the
things that we pointed out before the lateral part of the eye for me looks
quite raised so I do think that she's had a bit of filler on to you I do I do
I will come out on a limb and say that um the cheek also looks a little bit
repositioned I think you like you mentioned before I mean that as we age
tissues move medially and South and I think what appears to me for monthly is
that everything just seems to be gradually just lifted you know you could
argue maybe that's just her unique their shape you know her unique shape that's
the way of aging has has happened for her you could argue that you could argue
you could yeah um but I mean there's no doubt about it she is a stunning
stunning woman and you know she's known for her smile her eyes I mean I could
admit when I met her in real life her beauty is breathtaking
me as well the the shape of the face has changed from being you know a little
more on the square side yes you've been longer and that's something which also
occurred with Renee Zellweger remember hmm the same yes yeah she's
been relayed I think she's very heart-shaped she's very she's literally
got that triangle of you that we all want I am in love with these stars I
think she's got she's been Renee but she looks amazing yeah
next up we've got Priyanka Chopra famous at least to me for her role in Quantico
over to you I mean she's a little bit different Priyanka and so literally a
beauty queen in the real sense of the word I think she started off by winning
Miss Globe some booties or contests and then she's had a string of films in
India and highly successful career huge advertising contracts and then she's
quite unique in the sense that she's made her own role in America really
really she's really renowned for for bridging the gap between Hollywood as
well so Priyanka is a bit of a trailblazer not only in terms of her
career but also in her love life as well of
course you just recently got married to Nick Jonas
undoubtedly frankart is a stunning beautiful woman of course the reason
you're all on this channel is you're wondering has she had anything done well
for me I do think there is a bit of a change in the nose so I suspect that she
probably had a very minor rhinoplasty which is very common and also there's a
change in the smile as well so beforehand the smile was quite canine
there was there was quite a lot of show wasn't there you could see and then
maybe she's had some treatment to slightly mask that it's possible the
other thing I know is Priyanka is really famous for her full full lips and we
know that like from the age 25 28 29 onwards the lips start to lose volume so
it's not unfeasible that she might have opted in for a treatment like like a
gentle but she has got probably the most famous
lips and I can see why but whatever work it is that she has had
done I again think it's very very tastefully done they've done a great job
not sure who's responsible for that but thumbs over anyone okay okay he has
to put that caveat in but thumbs up really is it's nice work I think what's
interesting about Priyanka's face is something about the aesthetic
proportions where we've got quite a nice strong jaw and and really full lips as
well I mean we've said there's no people like Angelina Jolie they will get away
with those beautiful lips exactly we get some of our patients who will say look I
want lips like Priyanka Chopra yeah I've actually had that asked me so many times
but when your face is very slim or there's not much in terms of soft tissue
there to support those fuller lips can look a little bit of a mismatch
quite right yeah and you don't know why but it is that it's that aesthetic
proportionate yeah so it's the width guys if you want to have full lips you
really need to have a bit of width in the jaw next up we've got our SRK yeah

know about Magaziner facial surgery and you know the the aging of the facial
skeleton it's very interesting that usually the lower part of the face or
the lower facial skeleton the mandible tends to have different changes jawbone
yes sorry sorry yes so the the jaw bone changes with age and actually we get
some resorption of that bone in men and in women but with Shahrukh who just
looks healthier and stronger and even more masculine as
time progresses and dr. Kishen what do you think could possibly be responsible
gonna get to commit I could just be healthy living working out on the gym I
mean that's a possibility in a growth hormone testosterone GUI works do you
think that a chin could change like that I mean you know we're gonna if you are
gonna hold me down don't have to say this is one gentleman I think he
probably has had someone it's good it's very good I think he looks more
masculine they've managed to keep that they haven't made him feminized which
can often happen when a man gets injected they've done a lovely job on

the pictures I don't think there's any denying that there's a rhinoplasty going
on here could ever make up Sarah know what you girls get up to with all your
contouring but yeah bring him on this video you're not gonna commit to
anything that's fine I think she's really famous for her dimple sort of and
she has got this classic triangle of youth and I think you know like apart
from trying to get me to commit to having an opinion about these these
celebrities I think what's really important about the Indian film stars is
they've actually got some fantastic facial proportions which if we have a
patient who comes to us who's like this and actually wants to press pause on the
facial aging process we've got the tools where we can preserve that triangle of
beauty where we can maintain those those superficial and deep fat pads so we kind
of just pressed pause and they will look better and better and better cheeks like
they tend not to age - well you know they do get heavier as the facial
structure changes as we get older cheeks which are previously the fad was here it
will end up sliding down the face and she's managed to magically not have that
happen to her so I would dare say that there is a bit of clever work going on
here but again very nice would I swap faces probably yes I think what's also
interesting is that all of these stars have got a lot of question on them not
just to look young but to look really fit so they will have rigorous training
schedules diet their their exercise that they'll be doing is going to have a toll
on their facial structure as well and classically we see sort of a May last
split because of separation of the fat pads all or certainly sort of a more
pronounced Ridge within the within the cheek zone yeah and that we don't see
with these these wonderful looking celebrities yeah so what a mystery it is
all masses died for that weight we something which we do see quite a lot
reference with regards to Bollywood stars is changing in skin tone not the
stars in particular but it's often something which is written about you
know them changing themselves in this way do you have any comment I just think
it's fascinating because there's been for many for decades if not centuries
there's been a preoccupation with having a fairer more golden or sometimes they
describe that as a wheatish complexion so in India they say if you have a
wheatish complexion you're more attractive you're more likely to find a
partner and like your other studies have shown about sort of levels of
attractiveness you will have a better life in general you you'll have a better
job you'll be acquitted of crimes easier so yeah it's unique to India in the
sense that people will avoid the Sun people will sometimes use skincare or
have treatments that makes their skin brighter and there's a multi-million
dollar industry in fairness creams for example I'm really pleased to say that I
think in India things have changed or they are changing we're sort of
different complexions of being held up as examples of beauty as well and this
goes back to our aesthetic proportions genuinely beautiful faces and
idealized as examples of beauty regardless of skin color and I think
that's a really progressive thing bindiya there's quite a few models now
who have been identified as sort of having darker complexion and and yet
very beautiful so there's Nandita Das there's Kajol there's Bipahsha Basu
and gargle is quite famous because she used to like resolutely have sort of a
monobrow she wouldn't sort of separate the other
brows and it gave her a very natural very girl-next-door look and I think
this is why having this conversation is great because it opens up discussion but
I think many many Indian women and men have sort of believed in healthy natural
good looks portraying them portraying themselves as in the most natural way
possible minimal makeup
classically they've denied having plastic surgery or injectables I do
think that's changing and just from conversations I we've been having with
Indian doctors it just seems to be more and more popular these days kind of
expensive over there I think for the level of skill that some
of these doctors have it's you really do get the service that you pay for
I mean just looking at these stars that we've been talking about there's a few
male stars who look so good I mean including us SRK Aamir Khan amongst
others and they've reached this age looking as good as that I have to say if
I look as good as that when I'm in sort of 50 55 60 and I'll be very very happy
so I suppose we should definitely stay friends I guess we're gonna have to

The Mark of a Great Opening Pitch Selling Merchant Services - Duration: 5:46.Hi, my name is James Shepherd.
Today I want to share with you the mark of a great opening pitch, when you are selling
merchant services.
You are going into a small business walking in or you are on the phone and you are trying
to come up with a great opening pitch.
What do you say when you first meet the merchant.
How can you tell if you are having success with the opening pitch?
Well, one thing I've really come up with lately is I've been working with agents
in our 6 Week Jump Start Program and trying to help them with their pitch, trying to help
improve it.
I've come up with an interesting metric that I use with the opening pitch and that
is how many times, what percentage of the time do people ask you a question after you
finish your opening statement?
How many times does the prospect, what percentage of the time does the prospect ask you a question
following your opening statement?
You should really be getting a good 30 to 50% of people after your opening to ask you
a question.
Let me give you an example of a couple opening pitches that I've been talking to sales
people about and things lately.
Let's say that we are selling cash discounting for instance.
One agent I know uses a pitch similar to this, where he goes in and says, "Hey, I know
you get all kinds of people coming in here pitching you merchant services and so there
is always that constant barrage.
The reason I am here today is not to talk to you about any traditional processing or
anything like that, but the reason I am here to talk to you is I have a program that is
$89 a month.
There are no transaction fees.
There is no percentage fees, no other monthly fees.
There is nothing.
It is just an $89 a month program.
Whatever you are paying in credit card processing fees right now, it would just be $89."
He just stops.
It is very important what you do at the end of that.
You could add something onto the end of that opening pitch and really ruin it by saying
something like you know, "Is that something you are interested in?"
Well then, you are asking them for a response.
You don't want a response.
You want a question at the end of your opening pitch.
Okay, so if you can get a good question at the end of it, that's a great opening pitch.
So by just stopping there, what is merchant going to say?
Well, they are going to probably say something like, "Well, how do you do that?"
That is a really good opening pitch because you are getting that question at the end of
it.
That is really, really powerful.
Let's say that you are selling traditional processing and you are talking to maybe a
larger merchant, or maybe a multi-location merchant.
You go in there and say, introduce myself, "Hi, my name is James Shepherd.
The reason I stopped by today is I'm a consultant and what I try to do, I try to help people
reduce or even cut potentially 20, 30% off of one of the largest expenses on their profit
and loss statement, on their income statement."
You just stop right there.
When you say that, what is the prospect going to say?
They are going to say, "Which one?"
You know.
The agent I talked to, I didn't come up with that one.
That was actually an agent came up with that and shared it with me yesterday.
He is using that pitch and he is getting a lot of people to say, "Which one?"
He said, "Sometimes they'll even joke with him a little bit and say, "Well, yea,
how about my payroll?
Can you reduce that one by 50%?"
You know and kind of joke about it.
Then they ask, "Which one are you talking about?"
Then he goes into "Well, I'm sure you noticed on your statement how big your payment
processing fee is relative to even your rent.
A lot of people pay more to process credit card payments than they do for their rent.
My goal as a consultant is just kind of review that and see if there is something we can
do," and the rest of the spiel.
Think about that.
Now there are definitely other opening pitches that you can utilize.
I used an opening pitch for years that got a controlled response.
It didn't actually get a question at the end of it.
For years, I used an opening pitch where my question at the end of it was about their
processor.
I would say, "Do you know who you are currently processing with?"
No matter what they said, I already had my response prepared for that, but what I've
noticed is that over the years as the market has gotten a little bit tougher to sell in,
you actually don't want to put all your cards out on the table in your opening pitch.
A lot of times you want to make that opening statement without ever even mentioning merchant
services, without ever mentioning credit card processing, especially if you are in one of
these metropolitan areas.
You are in Dallas, Texas, or New York City, San Francisco, LA, that kind of thing.
You don't really want your opening pitch to be all about merchant services, because
you are going to get to the end of the opening pitch and they are going to say, "I'm
not interested.
Get out of here."
So instead of a response, try to restructure your opening so that it elicits a question.
The reason that is so important is because when a prospect is asking you a question,
there are two things about that, that are very important.
#1.
Asking someone a question means that you expect them to give you a reply.
If you are doing your opening pitch and somebody says, "I'm not interested."
They don't want you to say anything else.
What they want you to say is, "Okay, have a nice day," right?
So you are really going against the grain to continue the conversation.
When someone asks you a question and says, "Well, how do you do that?"
Or "What do you mean?
Which expense item is it?"
They are expecting a response and so now you have another chance to say something.
If you can kind of keep that process going where the prospect and you are engaged in
a back and forth conversation, it's really going to help you out a lot.
My challenge to you today is really, really simple.
Think about your opening pitch.
Okay, when I say opening pitch I realize there is usually a little bit of small talk when
you first walk in, or on the phone, but once you start talking about what you are selling
and you get done with that opening statement, that 15 to 30 second, maybe 45 second pitch
that you have, or presentation you have and then you get to the end of that statement
and you stop.
The merchant has a chance to respond.
See if you can come up with a pitch that's going to get them at that moment to instead
of giving you a yes or no response, or some kind of response to instead give you a question
to allow you to continue the conversation.
Try that out.

This is going to give you a brief outline or what evident
We'll be working on over the next couple of months and I'll share my thoughts throughout this
So last week the Evernote CEO in small posted on their blog all about his priorities for Evernote over the next couple of months
Now I picked out a few key statements that I write to share with you guys
So Ian mentions I have spent the last two months learning about Evernote both from the inside
Out and the outside in and another panelist Eamonn also says and becoming really clear on Eva's own strengths and weaknesses
I've also been reviewing the company's financial health
Which I'm pleased to report is extremely sound from the outside in I've spent time listening to you our customers
Partners and community the people who know Evernote best and I've spent time looking at the overall competitive landscape
Understanding the category they're ever know created has continued to grow and is now shaped by many companies
But inventing the future requires being able to stand on a solid foundation now just a note
These are a few clippings from the piece. So it's not the full piece. I do recommend reading the full piece first things first
I do like the way that you started this it's really respectful
It does understand that there are flaws with Evernote and they definitely intend on changing them and I hundred percent agree
they need to work on the foundations and it's something that is definitely confident on doing so let's dive into the next little bit and

Today that we are currently doing. In fact, we can do better than we have been doing for some years frankly

When exactly those same people are the ones who know best that sync doesn't always work right or that Evernote on Windows is a bit
Tired and it is missing features that are found on the Mac version or that each version of Evernote seems to be work slightly
Different and exhibits its own unique collection of bugs and undesirable behaviors or that Evernote on mobile
Sometimes feels like a head down version of the powered desk
powerful desktop app instead of the mobile first view into a powerful cloud enable productivity environment because ultimately
by choosing to use Evernote each of you gives us the privilege of serving you of
Trying to make your life more focused more organized and more productive in return
It's our responsibility in an untreated to serve you well now actually when I read this
Actually felt that Evernote finally got it
they finally understood that they haven't quite hit a nail on the head and these I
particularly, like the ins highlighted some of the key features that have been annoying people because actually shows that he's aware of them because
sometimes when you know, for example the fact that there are so many features sort of off with Evernote is
Not good and actually highlighting them not just saying all of our bugs, you know, this is something that actually is
resonates with me especially
Over the years I've been with Evan. Ooh, so now moving slightly onto the goals area
Ian highlights a few goals and he says our goals are simple, but meaningful number one
We're going to create a more coherent more consistent Evernote experience for every version of the product. We ship an
experience that fixes the essential features on which all of us depend
number two
We're going to make a fundamental changes to how we develop and deliver
Software so that we can start to ship faster across all devices we support and that all of us can experience the same Evernote
regardless regardless
regardless of which device we use to experience it and number three and we're going to make
Improvements to the core infrastructure that sits behind the application you experience so that we can deliver an Evernote with speed
Reliability and scalability that all of us expect you also finally mentions despite this risk
I'm convinced that focusing on the basics is what we need to do first in order to best serve you not just now but
Years into the future now
One thing I want to say here is looking at the goal side of stuff number one
I think that that goal is or two awards
reconfiguring the plans
For example what's included in them what features are included in them and how they intend to monetize in the future?
I didn't think we're definitely going to see a change in the Evernote basic in the next couple of months and
How it is perceived by everyday users number two
The goal - I think focuses on launching across the board so actually shipping the same experience on all devices
So for example Evernote Mac isn't a look like Evernote
It is gonna look like Evernote for iPhone or Evernote for Android
It's all going to be consistent
which I definitely think is needed and
Finally the third thing that I think he focuses on is the bug security issues and the reliability of the service
I think people really want Evernote to be that reliable consistent experience
It has been in the past but in the last couple years not so much. I really struggled to open up my iPhone
There's always crashes bunks and it just really horrible experience to use
So the really good news is if you're an Evernote user
Ever new have become aware of all of their problems and when I actually chat with ian small
He honestly did have
He was all ears open and he's definitely wanted
everyone to be happy in terms of
Starting small and building out because I don't think is the sort of person that Russian and a new feature
I think he's someone that will change from the bottom upwards
So Evernote must work on their foundations first, and it's something that I definitely think they are working on hard
So it's going to be exciting 2019 for Evernote
Either way Evernote have put out this challenge that I didn't want to mention. That was at the bottom that blog post
It's good ever better challenge. I think it's a great little initiative if you're looking for a 30-day
Challenge for setting a goal in 2019. I can't recommend it enough
They've got a brilliant explaining video on it with Forrest the guy who runs their podcast
And it's definitely recommended to go and check it out
Also, I'm going to be putting or I probably already have put out a video on notions Web Clipper. I probably really stood today

Just left Tahoe driving across Nevada heading to Utah for the first couple lines of the
season.
Looking at skiing Mount Superior or the Hypodermic Needle both in Little Cottonwood Canyon, which
line I get to ski pretty much entirely depends on stability.
Right now stability does not look good with a lot more weather on the way.
So I don't know what to expect other than I'm gonna link up fellow Salomon athlete Drew
Peterson, few other friends and locals to the Utah scene and were gonna just takes these
problems as they come.

We expect that Leclerc will fight with Verstappen, Gasly and Norris, that will make his debut this year.
But still too soon to say that he's going to match expectations. Max for example is doing great until now.
Pierre Gasly did well on Toro Rosso but the pressure on Red Bull is bigger. So young drivers must prove themselves on big teams
before we expect a lot from them. Leclerc is very mature for his age but the pressure on Ferrari is going to show us if he's is going to resist.
