PREPARING FOR THE PALIO THE PROVA GENERALE
PIAZZA DEL CAMPO, SIENA
This is the Piazza del Campo, epicentre of the Palio of Siena.
Twice a year, in July and August
around 40,000 people crowd into this square
to witness a race that has happened here for over 500 years.
Today is the dress rehearsal, run with the jockeys and horses
in the traditional medieval costumes of their district.
The strips of colours in the stands behind the starting line
represent the districts who are racing today.
This is only a trail, so the horses aren't pushed too hard.
An injury before the Palio is far too much of a risk.
If you look to the left of where the horses are lined up:
note a 10th horse at the back.
It's the "rincorsa", or "run-up" and it starts the race.
When it crosses its mark the starter will drop the rope...
and the race begins!
This racetrack is seashell-shaped and notoriously treacherous.
It's not unusual for the jockeys to be thrown off their horses
and the horses to carry on the race without them.
Some Palios have even been won this way!
This is a race for glory not money.
The winning district simply receives The Palio,
which is the silk painting awarded as a prize.
Three laps later and the race is over.
It typically lasts just 90 seconds!

I'm garima & on GG's Plattter today I have Ghazala with me.
Hi Ghazala..
She is my sister in law & as I have already told you that here guests are most welcome.
So she's coming from my own family, she's my sister in law.
She cooks mouth watering Sheer Khurma
We'll talk more as soon we'll proceed towards the making of dish.
We'll know something about her.
First of all we have to wear apron of GG's platter
So what we have to do first?
First of all we'll heat up the pan
Let me share the ingredients for Sheer Khurma:- Vermicelli, Chopped & mixed dry fruits.
Sugar, Clarified butter, Green Cardamom
Milk & water also.
We'll heat up the pan, we'll put some clarified butter in it
Quantity of clarified butter depends on you. how much you want.
Add minimum clarified butter, if you are calorie conscious.
Now it depends on you that you want to keep the vermicelli like that or want to break them.
Since my kids are small so they like & prefer the breaking form of vermicelli so that they can have it easily.
These vermicelli's are made up of which ingredient?
Vermicelli's are made up of all purpose flour and wheat flour both.
We have to roast them in clarified butter, so that when we'll be mixing them with milk & sugar syrup.
They should turn soft easily that's why we roast them.
When it will coating of light brown colour, we;ll keep it aside.
As you can the colour of vermicelli is turning golden brown.
Now we'll take this out, you can also take it out on the tissue paper so that it absorbs extra oil.
Now in the same pan we'll put 4-5 Green Cardamom
If you want you can use cardamom powder
Now we'll add these dry fruits and slightly saute them.
So its a calorie loaded dish. yes...
It has clarified butter, sugar & dry fruits... Yumm
This is the same dish, which perhaps you served on Eid ? Absolutely..
Our dry fruits are done, now we'll add sugar.
If you like sweet you can add more or else if you like limited sweet then add 5-6 tbsp sugar.
But,when you are cooking such dish, which contains clarified butte, dry fruits then add sugar generously.
Since its Sheer then it has to be sweeten.
Now when we have mixed sugar, as soon its slightly brown too then we'll add water in it.
You must add the water according to the quantity of vermicelli.
Ok. yes..
Take water if you have enough quantity of vermicelli
I've taken half glass water and I'm making 1 string Sugar syrup within 6-7 mins
So this is the another liquid apart from milk... Yes..
Here we have our 1 string sugar syrup is ready
Adding our roasted vermicelli in it.
What a fragrance.. & now we'll cover it with the lid so that the vermicelli may turn soft.
We'll cook it on the low flame
Now we'll cover and cook them for 2 mins as in they are already roasted so they'll be cooked very fast.
So how can we cook Vermecilli Halwa? That cooks with the same method unless we add milk in it.
It I make it completely dry that's called Vermicelli halwa.
So the quantity of the water will be the same or more? No quantity of water depends upon the vermicelli.

Now the vermicelli are soft and ready
As you can se
We haven't make it completely dry, we have kept some sugar syrup in it
Now we'll turn the flame off & we'll let it cool down for 5 mins and then we'll add milk in it.
Or we can have it like that?
O course you can have it like that ..
Ok but why are we adding milk after when its cool down.
The reason behind adding the milk in cooling stage is, adding milk in warm vermicelli will separate the milk.
Oh, ok...
What we are suing is boiled and cool milk.
It means its also cool not warm.. yes
So vermicelli and milk both of them should be cool. Please make a note for this recipe.
So after that we have to cook it again ? No because our milk is already boiled
After 3-4 mins we shall add mik and our sheer khurma is ready.
Oh, absolutely ready to serve.. yes. great
I just can't resist, so is it ready to add milk? Yes..
As you can see there is no steam which means its cool down.
Now we shall add milk in it
The quantity of the milk depends upon your liking, if you like thick add less or add more milk if you like thin consistency.
Point to be noted, quantity of vermicelli and sugar should be equal.
Rest of the ingredients like dry fruits, sugar and milk you can add or less according to your taste.
Why we are adding more milk because as soon the sheer khurma will turn cool down.
The vermicelli will suck the milk and will turn thick, so that's why we are adding more milk in it.
But do you think that khurma is going to last for longer period?
Today I'll make you eat sweet dish and this would be a torture from myself to you.
Its my right and torture too on you.
Since you don't eat sweet dish but you must eat and praise me.
Korma is non-veg dish and this is khurma.
