Hey guys, today I'm going to show you how to make some apple tarts and we're gonna
be making them in a muffin pan.
So I'm gonna first start making my dough and
this is just a simple butter pastry.
So here I have some plain flour, to that I'm
adding some salt, a little bit of sugar,
and I'm just gonna mix that just to get those combined.
Now I'm going to add some really cold butter and make sure it's
really cold so you get a nice flaky pastry.
And the smaller you cut the cubes
of butter the easier it will be to cut into your dough.
Now you can rub this in
with your hands but I'm going to use a pastry cutter to cut this into the dough.
So this is what you're looking for,
it's kind of like a coarse sand texture and
there's some slightly smaller and some slightly larger chunks.
Then to that
you're going to add in some cold water and an egg, and I'm first just going to
beat these together to get them combined.
Then just add that to your dough.
Now I'm just gonna start mixing until it comes together.
So once you've made your dough you're gonna roll it out and we're gonna shape
it into a muffin tin today and to get the right size of the circle you should
have a cookie cutter that's about four inches which is about 11 centimeters in diameter.
And I've just buttered this really well with some butter and I've
put it in the fridge because it helps kind of create a better coating so your
dough doesn't stick to the pan.
And make sure to rotate your dough every now and then just so it doesn't stick
to the bottom of your work surface.
So take your cookie cutter, if you don't have a cookie cutter you can just use a
plate and trace around it.
Then just take each piece of dough and gently press it inside of your muffin tin.
Try to brush off the excess flour.
So once you've done your first round you can bring the dough together one more time,
I wouldn't suggest re-rolling it more than twice just because it loses
its flakiness the more you work with the dough, so I usually get about 10 to 11 of these.
Okay so once you've done all of your tarts you're gonna chill the dough for
at least two hours, up to overnight is usually what works best, and then once
you do that you can get to making the filling and to bake them.
Okay so once
your dough has chilled you're gonna start making your filling, and for the
filling I'm using some finely chopped apples you can use any kind you like
just make sure that they're more on the crispy side because if you use softer
mushy apples you'll get a mushy filling.
So to my apples I'm going to add in some
sugar, some cornstarch - this will help thicken up the filling,
some lemon juice,
and some brandy, if you don't want to use alcohol you can just replace it with
more lemon juice.
And give that a mix to coat the apples really well.
Okay so once you've made your filling you're gonna start filling up your tarts
and you're gonna put them to bake.
On the bottom of each tart shell I'm
going to put a little bit of apple sauce this will help give more flavor and also
add some extra texture.
So you'll need about a tablespoon for a tart.
And then you're going to take about 2 to 3 tablespoons of your apple mixture.
After that all that's left to do is to top it off with just a little bit of butter.
So once you've filled up your tarts you're gonna bake it in the oven
at 180 degrees Celsius which is 350 degrees Fahrenheit and they're gonna
bake for about 30 to 35 minutes or until the edges are nice light golden brown color.
