Today I want to share with you
Thermomix has a temperature display functions , which can control and reading temperature precisely
By using this special function in Thermomix, we can home made yogurt at home easily
The ingredients you need are simple
only require 3 things
milk
milk powder
and pot set natural yogurt
I using full cream milk
You can use lite milk
both will do
For yogurt, if this is your first batch
you can buy the pot set natural yogurt from the market
or greek yogurt
to act as your yogurt starter
This starter
"starter" contains the live bacterial cultures
that help transform milk into yogurt
If this time round you make the yogurt successfully
remember to reserve 3 table spoon of the yogurt
to become your next batch starter
If you're making a sweet yogurt
I can suggest you to
use vanilla yogurt
to act as your starter
Firstly, pour 1 litre milk
into Thermomix bowl
followed by milk powder
set 10 sec
Speed 7
to mix it well
If you want to make a sweet yogurt?
at this time you can add
2 teaspoons vanilla essence
and 30~50 g sugar to this step
After mix it well
you need to heat the milk
set 30 min
90 °C
Speed 3
About the speed of heating milk
There are many thermomix recipes
set it as speed 1
But my is speed 3
the difference between these is
I have tried speed 1 before
But , after heating the milk
you will get a burnt film of milk
on the bottom of your thermomix bowl
it is not really hard to wash it off
it does comes off quite easily
But is you use Speed 3
you will hardly get burnt film of milk
I did mention before
If you want to make sweet yogurt
after mixing milk and milk powder
you can add vanilla essence and sugar
This is one of the method to do sweet yogurt
Here I am sharing another method
to do sweet yogurt
you can add a 2 tea spoon of honey after the milk has finished the heating step
So you will have 2 choices
you can choose between
add vanilla essence and sugar
or add honey
But for this time round
I am doing natural yogurt
not sweet yogurt, therefore I will skip the step
after heating process
We need to wait for temperature to drop down
What is the temperature we are looking for?
it is 37°C
this is crucial to the KEY success
37°C
But how to achieve that temperature
Some thermomix recipes ask you to put the theromix bowl
in the fridge to drop down temperature
For me, I did not use this method
No1, my fridge has no space for Thermomix bowl
No 2, I feel to put something hot into the fridge
is not so good
then what metho am I using?
My method is to let it drop down naturally, just leave it there
of course, this method i take more time
I leave the cover open
and wait!
Of course, Thermomix will shut down after few minutes
Just do not care about it
and wait!
I roughly waited for an hour
and I switch on Thermomix back
To check
what is the temperature now after one hour
you may see the temperature display on Thermomix clearly
If the temparature still high
not yet reach 37°C
then I wait again
You can set alarm
come back to check every 15 mins
to see how much temperature it drop until you reach 37°C
remember to set alarm. Do not let it gets way below 37°C
Someone asked me
What should I do ? if it gets way
below 37°C?
Do not worry friend
just put it back on to heat up again
set 5 mins
37°C
Speed 3
This is the milk and milk powder which I heated previously
now the temperature is 37°C
Next, is to add in 3 Tbsp pot set natural yogurt (starter)
and then, set 4 sec
Speed 4
to mix it
and then set 10 min
37°C
speed 3 to cook
This is after cooking
3 Tbsp pot set natural yogurt (starter)
inside has active live cultures
under 37°C
is crucial to make yogurt
it will help transform milk into yogurt
end result will be yogurt
After the cooking and heating process , my way is to leave it 8 hours
do not disturbed by shaking, tilting, or rattling during incubation
For me, I leave it on top of the Thermomix machine
I did not use warm towel
or blanket to cover it
I do nothing
Just leave it for 8 hours undisturbed
Usually I make it at night before sleep
I then can enjoy yogurt on next day morning
Maybe because I am staying in Malaysia
Malaysia located near the equator
So , I am use this method and do nothing
because our climate average hot and humid
But , if you staying at somewhere the temperature is quite cool
Recipes show you should
pour the cooked milk into your pre-warmed Thermoserver
Wrap your Thermoserver in a thick towel or blanket
to warm it
minimum 6 hours
Maximum up to 24 hours
the more you leave it
The more thicker yogurt it will be
The longer you allow your yogurt to incubate the sourer it will become
This is my yogurt which left for 8 hours
Let me show your the texture of my yogurt
You may try few times
slowly you will get the consistency that you want.
Do not forget to left 3 tablespoon for next batch
