Today we will prepare a long-known and many favorite snack liver cake with onions, carrots and mushrooms.
This is a very beautiful, incredibly tasty spectacular snack, which looks great on any festive table.
This dish is relatively inexpensive, for its preparation, any liver - beef, pork, chicken, and the liver, as we know, is a very useful product.
Hepatic cake is a very hearty snack, for its preparation all the products need to be fried,
And in order to use as little oil as possible, it is desirable to cook in a frying pan with a good non-stick coating.
I suggest you, together with me, test the frying pan from the well-known Petersburg producer of non-stick cookware VARI.
Brand VARI is well known and popular among connoisseurs of quality dishes.
Frying pan made of cast aluminum with thick walls up to 4.5 mm. And a thickened bottom to 6 mm.
The diameter of this frying pan is 24 cm and the height of the rails is 5 cm.
Frying pan is quite heavy, weighs almost a kilogram,
And as stated by the manufacturer, the heat should be evenly distributed over the surface, which will ensure a uniform frying of food.
And now I'll check it with you.
To prepare a liver cake cake, we will need the following products:
For pancakes: • 900 gr. Of the liver
• 1 large onion • 200 ml. Milk
• 200-250 gr. Flour • 5 eggs
• 4-5 tablespoons. Vegetable oil • salt, pepper, nutmeg
For filling: • 3 large carrots
• 3 large onions • 200 gr. Mushrooms
• 50 gr. Butter • 200 gr. Mayonnaise
• 200 gr. Cream cheese • garlic
For decoration: • 4-5 boiled eggs
• fresh herbs • fresh tomatoes
First you need to prepare a dough for liver pancakes.
To do this, you need to pass the liver in a meat grinder or grind it with a blender.
I will cook from chicken liver, but you can take pork or beef.
If you scroll the liver in a meat grinder, then take the grill with the smallest holes.
Further in the same bowl you need to grind one large onion, just let it through the meat grinder.
We chopped the liver and onions, beat the raw eggs there, poured in salt, pepper and nutmeg, all thoroughly mixed until homogeneous.
Pour milk into the mass, stir and add flour in small portions, kneading the dough to consistency, like pancakes.
Add the vegetable oil to the ready dough and mix again well.
If you want the mass to be more uniform - pierce it with a submerged blender.
This is the dough we got.
We leave to the stove to fry the pancakes.
We will cook on the gas stove, although this frying pan is suitable for all plates, except induction.
We install the frying pan on the stove, warm it well, reduce the fire to medium and proceed to frying the pancakes.
As stated in the instructions to the frying pan - before the first application it must be washed and a little oiled, which I did.
Fry the first pancake on a lightly oiled frying pan, turn it over and in half a minute remove it.
Shoots very easily.
But as the manufacturer claims, it is possible to cook on this frying pan without oil, now we will check whether it sticks or not.
Pour into the frying pan a full ladle of liver dough and within one minute fry the pancake on medium heat on one side.
Let's try to turn it around.
And to my surprise, he completely did not stick and turned over superbly.
Lightly fry it from the second side and shift it to a plate.
Look how easy it slides off the frying pan, the rest of the pancakes will be fried as well without oil.
As stated by the manufacturer, the frying pan is manufactured in accordance with GOST R51162-98, covered with quality safe for health, Italian Teflon coating Whitford (Vitford), which is reinforced with titanium particles.
This makes the coating so strong that you can use even metal not sharp blades and spoons, as you can see, I turn the pancakes with a metal spatula.
When frying pancakes, none was burned, the roasting is uniform due to the thick bottom and multi-layered protection against burning.
From this quantity of the test I got 15 pancakes.
And while the pancakes are cooling down, we will prepare a vegetable filling for our cake.
To do this, cut the onion into a medium cube and add it to a bowl.
Carrots rub on a large grater and put into a separate bowl.
Mushrooms cut into small cubes, I have pickled mushrooms, but you can take any mushrooms, fresh, frozen or even cook stuffing without them.
Instead of mushrooms, you can use pickled cucumbers.
We shift the chopped mushrooms into a separate bowl and go to the stove to fry all the vegetables.
We install the frying pan on the stove and warm it well.
As we have already seen, it is possible to cook on this frying pan without oil,
But in order to give the filling a pleasant taste, pour a little vegetable oil and add a slice of creamy.
We pour the onion into the pan and, stirring occasionally, fry it until lightly golden.
As soon as the ray begins to be roasted, pour the mushrooms into the pan and fry along with onions for a few minutes.
Then add the carrots, lightly reduce the heat, mix well and stew our vegetables until the carrot is soft.
Although this is not the largest pan in diameter, but due to the high flanks in it, you can simultaneously prepare a large number of products and with stirring they do not fall out.
As you can see, I have overcooked all the liver pancakes, and now I have roasted onions, mushrooms and carrots.
At the same time I want to note that the handle of the frying pan does not heat up, it is soft and pleasant to the touch and does not slip at all.
Vegetables are fretted, carrots are soft and now you can salt and add pepper.
Once again, we mix the vegetables and put them into a separate bowl, so that they cool well.
As you can see, after frying the vegetables nothing stuck and burnt, the frying pan was left almost dry and clean.
It is very easy to take care of it, after cooking it will be enough to rinse it, although it is possible to wash the frying pan in a dishwasher.
Pancakes and vegetable filling are ready, and while they cool, prepare the sauce.
To do this, we chop the garlic into a separate bowl, it can be squeezed through a press or grated on a small grater.
To garlic, add cream cheese, mayonnaise, a little salt and pepper.
Mix the mass until it is uniform.

The sauce is ready, we set it aside and prepare the decorations for our cake.
In pre-cooked eggs, we separate the proteins from the yolks.
We rub on the small grater of squirrels and in a separate bowl of yolks.
Very finely chop the greens, which must be washed and dried in advance.
All products are prepared, and it's time to start assembling the cake.
We take a plate on which we will serve our cake and lay it layer by layer: pancake, lightly grease it with sauce and lay out a full st. Spoon of vegetable filling.
Evenly distribute it across the surface of the pancake.
From above again we put pancake, sauce and vegetable filling.
In this sequence, we collect the whole cake.
On top of the cake covered with the last pancake, lightly pressed, greased with its sauce first from the side, and then from above.
Decorate the cake on your own.
I wanted to decorate this way...
I laid out the center of the cake with an egg yolk, along the edge with boiled protein, sprinkled the sides of the sliced greens, and laid the roses, cut from tomatoes, over the cake.
It remains to decorate with leaves of parsley.
Our snack liver cake is ready, that's how it turned out!
It is advisable to remove it in the refrigerator for a couple of hours, so that it is well soaked.

The cake turned out to be high, multi-layered, very beautiful on the cut.
Delicate liver pancakes are ideally combined with fried vegetables, creamy garlic sauce and fresh herbs.
This snack is not only delicious, but also very hearty.
