What's cookin' guys! Welcome back to the channel, my name is Jay and today we are
not in our kitchen, we're here at Magnolia Bakery in Los Angeles where we're going to try to
taste test and recreate their famous banana pudding.

Every time I go to New York City I make sure to find the nearest Magnolia
Bakery to get some of this banana pudding. It's so good! So let's take this
back to our kitchen and see if we can't make our own version. So Magnolia
Bakery has actually released the full recipe for their banana pudding, but we're
going to make a couple tweaks to make our own version. So the first thing we're
going to be doing differently is we're actually going to make our own pudding.
So in a small saucepan I have one and a half cups of 2% milk and to that I'm
going to whisk in a 14 ounce can of sweetened condensed milk.
All right so once the milk and the sweetened condensed milk are combined
I'm going to turn the heat on to medium and then I'm going to add a quarter cup
of sugar along with two tablespoons of corn starch, this is going to be what
thickens our pudding, and a pinch of salt. Now you want to keep whisking this so
you don't get any clumps in your pudding, consistency is key here. All right so
we've been whisking this for a couple minutes and it's starting to boil, so
here I have two egg yolks and what we're going to do is slowly pour our milk
mixture into the egg yolks while constantly whisking. What we're doing is
called tempering the egg yolks- we don't want to instantly cook the eggs by
adding it to a whole bunch of hot liquid, so we're slowly introducing the liquid
to the egg and then what we're going to do is pour the eggs back into our milk
mixture and then return this to the heat and reduce the heat to medium-low.
Alright so once our pudding has started to bubble up on the sides again we're going
to turn off the heat and then we're going to add two teaspoons of vanilla
extract and two tablespoons of butter.
if you see any brown bits in your pudding it's alright we're going to
strain it out before we refrigerate it. Alright so once the butter is melted
we're going to run this through a strainer into a container and then we're
going to take some wax paper and just push it down the container so it's
touching the top of the pudding and then we're going to let this set in the
fridge for four hours. Alright so our pudding has chilled off
on the fridge so I took it out and added it to a large metal bowl and we're going
to cut in some whipped cream to lighten the texture. So in my stand mixer I have
three cups of heavy whipping cream and to that I'm going to add two teaspoons
of Banana extract- I mean it's banana pudding what good a
little more banana flavor hurt? And then I'm going to put this on high until it
thickens up and you get nice peaks.
So what we're going to do is we're going to start off with half of our whipped
cream and we're just going to fold it in
and then once that's combined we're going to take the rest of our whipped
cream and fold that in as well. And then we're ready to assemble our banana
pudding. So I have a whole box of vanilla wafer cookies and five to six peeled and
sliced bananas and what I'm going to do is I'm going to start with a thin layer
of our pudding mixture. once that's in I'm going to add a layer of our cookies
along with the layer of banana and then about a third of the remaining amount of
pudding. We're going to keep layering until we run out of pudding and bananas,
you should end up with about three layers of pudding and two layers of
cookies and bananas. If you end up with any extra cookies you can shove them
down the side. Then we're going to finish with our final layer of pudding. I'm just
going to smooth this out and then top it off with some ground cinnamon.
We're then going to cover this and then put it in the fridge overnight you
really want the cookies to soak in that pudding and get soggy almost cake like.
