We have been here with Lina for 6 days so far.
It is our second time here.
Back then we enjoyed west side of island.
This time we try to go to the east side.
We are going to share our travel tips.

-For example interesting beach? -hmm... "baby beach"
-oh~ baby beach. -It is the most private beach I think here.
And it is for free. It doesn't have an entrance fee.
Alright. We've found nice and small beach.
I felt it was really clean and private zone.
But!!
We thought we couldn't go there.
-Because.... -There was no path.
It seemed to be like a wild forest.
We've found 'secret beach' during driving.
Wow~ The sea is so clean.
So we just stopped. I want to swim here.
The small issue is...
It looks not easy to get there.
-How can we go there??
If it is not easy to get there,
We will find another one.
I will show you this beach.
(SO PEACEFUL)
(But it is not easy.)
I love this place.
But it is a bit dangerous for Lina.
I think we shall move to another one.
Let's go.

We went to another beach.
I met a local man after we arrived to this beach.
We had a conversation and he asked me,
"Would you like a coconut or not?"
I said "Yes, please." Then he immediately went to bring it.
Oh, he found it on a ground not on a tree.
So many mosquito.
-Many mosquito?? -Yes. It is too much.
-Where are you from? -I'm from South Korea.
-I already cleaned this beach up. -Oh, it is so cool.
-Is it Rp15.000 per person? -Oh. Rp5.000.
-This is Rp10.000 for 2 people. -The fee is for cleaning.
That side of the beach is for free and it's dirty.
-Here you are. -Okay.
-Is this for free or...? -Yes. It is free. (AWESOME)
(We had a good rest on this clean beach.... Before typhoon came.)

And there are many trees.
We took a rest on the blanket under one of them.
-Why we call it 'baby beach'? -Because of our friend from there.
We saw a baby.
The same day some family had fun on the beach.
That's why we didn't go there.
We didn't want to disturb the baby.
-Anyway we said hello to the really cute baby from distance. -And he was naked.
Totally naked.
-Nothing on his body. -Yes. It is western style. Feel free.
I'm jealous of the baby. I wanted to feel free as well...
Because of the rain.
We were on the way back home.
We've met 'baby beach' again.
And the naked baby was playing on the beach.
Then we tried to find the path.
The father of baby was going to some path.
That's why we realized the right path.
Do you remamber another beach?
-Sunset beach?? -I think yes. It is one of my favorite beach.
That place has really beautiful scenery.
-But this time it is little different. -It changed totally.
-Compare to past when we came there for the first time. -It was just few months. 5 months ago?
It was way less then now?? But now... restaurant.
-This is like Kejeran Park(in Surabaya) -Yes.
There are not only many sellers...
I've never thought about any activity there.
But there is already banana boat and so on.
We really didn't expect it.
Thankfully the island is still very clean.
And good for resting.
We usually come to beach for drinking coconut.
And BEER.
-She drinks beer. I drink coconut. -Not always.
She really loves coconut jelly.
-Big Fan. -I want it now.
-The sunset beach is really good for sunset. -.......?? hahahahaha
OBVIOUSLY?!!
Actually the beach called 'sunset beach' is not the best one for enjoying it.
You can walk to left side of it.
There is another one.
The most left side is best sunset beach.
-How about this beach? -Oh this is absolutely new one.
It is true. I really didn't expect it.
Because it is a private property.
We thought we are not allowed to enter.
Of course, the entrance was closed.
And that building was hotel.
It is abandoned now.
I feel more adventure something?? (adventurous!)
It looks like a ghost house.
like the scary house in Lombok?

-Oh it was almost 10 times. -I'm not gonna do that.

Bridget Terry Long is the new Dean of Harvard Graduate School of Education - Duration: 3:45.I am sitting here today because of my parents and because of my family. We
really are a story about the importance of education and what education can do. I
mean, consider for a moment the fact that my great-grandmother was born into
slavery and emancipated at age six and the fact that my grandparents were
sharecroppers. How do you go from that to being able to attend some of the best
institutions in the world and now sit in this wonderful opportunity?
Well, my parents left the rural segregated south looking for opportunity.
My father went into the Air Force and when he came out it was the GI Bill and
an opportunity through a management training program that enabled him to go to
college and my mother as well, she went to college a little bit later in life
She moved out of the south and worked as a secretary for several years before she
was able to go to a historically black college that trained her to be a public
school teacher. As my parents careers progressed I was able to see what they
were able to do with their lives and it was the greatest example for me and so
in my life I've seen the importance of education and how it can take you out of
poverty, but more importantly how it can give you the agency to have control over
your own destiny.
I was drawn to research on education
because of issues of inequality and access, but I quickly realized, you know,
education does not end at grade 12. Students cannot go on and have a
middle-class standard of living if they end with just a high school degree and
so I've done work trying to help students get the information they need
and to simplify the processes so that we're not wasting so much great
potential of students who are doing the work that they need to do but are
getting lost in a system that was not designed for their needs.
One thing that
I love about the students at Harvard Graduate School of Education is each
year the enthusiasm, the hope, and already the experiences that they bring; I love
the fact that we know that there are problems in education but we're not
satisfied to just let them continue, and the students come because they are
prepared to create new things to help in all sorts of ways and that enthusiasm as
a faculty member is something that I've always drawn upon and I think the entire
community draws upon.
The Harvard Graduate School of Education is already
in a place of strength. We have done so much but our work absolutely is not done
When you look and see the continuing inequities and the opportunities that
are not available, the fact that we waste so much of student's potential because
they don't have access to high-quality education, you realize there's so much
more to be done. We are now 50 years after the war on poverty, we are 50 years
after Martin Luther King's assassination and we look around and we wonder why
haven't we made more progress, what more could we do? And then just two weeks ago
the Nation at Risk report that came out 35 years ago, we've realized those
inequities are still very present. It's all while the Harvard
Graduate School of Education has made many contributions, innovations, impacts on the
field with research, with leaders who are going out to the world with a strong
purpose and strong skills, we have to think about ways that we can do more to
spread the knowledge that we have, to engage with the field, to be a place
where practitioners and leaders and policymakers can come to learn more and
to engage with each other.

The Untold Truth Of Thor's New Hammer - Duration: 6:37.The Mighty Thor is virtually synonymous with his thundering warhammer, but unfortunately
for him, Mjolnir didn't make it through Thor: Ragnarok intact.
The good news?
In Avengers: Infinity War, Thor gets his godly hands on an even more powerful weapon: Stormbreaker.
If you're curious about its mythological roots and its cosmic comic book origins, here's
the truth behind Thor's new hammer.
The Norse arsenal
Norse mythology is full of magical weaponry, so it's probably not surprising that Stormbreaker
isn't the only other tool wielded by the God of Thunder.
In fact, Thor rolled into battle strapped with more magical weapons than anyone — including
Tyr, the god of war.
Mjolnir is the most important, but if you're only familiar with it from the comics and
movies, it might surprise you that the whole thing about being worthy was never actually
part of the original myths.
Instead, Thor was the only one who could heft the hammer simply because it was really, really
heavy, to the point where even he needed special equipment to lift it.
The Megingjörð was a magic belt that doubled Thor's already considerable strength, and
the Járngreipr, or "iron grippers," were gauntlets that allowed him to control Mjolnir
despite its heavy weight and unbalanced handle.
It's worth noting that the Megingjörð actually does exist in the Marvel Cinematic Universe.
When Happy Hogan is clearing out Avengers Tower in Spider-Man: Homecoming, he mentions
it as one of the items that's boxed up for transport.

Beta Ray Bill
Unlike Mjolnir, Stormbreaker doesn't have its origins in classic mythology.
Instead, it's pure Marvel Comics, where it belongs to another character: Beta Ray Bill.
When legendary creator Walt Simonson arrived on the book in 1983, the first thing he did
was tell a story about what would happen if someone else was worthy enough to heft Thor's
hammer.
That someone was a super-powered alien.
Beta Ray Bill was chosen to defend his people as they traveled through space as refugees,
and fought Thor to a stalemate due to a misunderstanding.
During the fight, his noble heart allowed him to lift the hammer and take the power
himself.
Once Odin found out that someone else had taken his son's power, his response was to
demand that Thor and Bill fight each other to the death in the fiery realm of Skartheim.
Not exactly the best example of parenting, especially since Bill won that one, too.
Instead of fighting to the death, though, Bill rescued Thor and brought him back to
Asgard, a test of his worthiness that was Odin's plan all along.
To reward Bill, Odin convinced Eitri and the dwarves of Nidavellir to craft a second hammer:
Stormbreaker.
It gave Bill all of Thor's powers, and with that, Thor and Bill became "oath brothers"
and allies.
While he hasn't really appeared in person, we do known that Bill, or at least someone
who looks an awful lot like him, does exist in the MCU.
In Thor: Ragnarok, you can briefly spot a sculpture of Bill's head at the Grandmaster's
gladiatorial arena, along with a villain called the Bi-Beast.
No, really.
The Mace, the Storm, and the Frogly
Beyond Stormbreaker, there are a couple of other Asgardian weapons of note in the Marvel
Universe.
The most prominent is probably Thunderstrike's mace, Thunderstrike, and yes: the dude and
the weapon both have the same name.
It turns out Eric Masterson is not an exceptionally creative superhero.
He was bonded with Thor for two years in the '90s, and when they were separated, Odin
gifted him a magical mace he could use to continue fighting evil.
It's functionally identical to Mjolnir, but with one major difference: its inscription
reads "The World Still Needs Heroes."
Drop that one on your opponents next time you get in some Marvel Comics trivia.
There's also Stormcaster, a hammer that Loki once gave to Storm of the X-Men in yet
another attempt to cause trouble for Thor.
Considering that Storm can already call down lightning to obliterate whatever she chooses,
and that she's already been worshipped as a goddess on Earth, this seems a little excessive.
That might be why she didn't keep it.
The Marvel Universe's weirdest hammer, however, comes from a story where Loki turned Thor
into a frog.
When he recovered his hammer, Thor struck it on the ground and transformed into… a
six-foot, six-inch frog with a helmet and a magic hammer, because comics are great.
Several years later, another frog who had once been human was revealed to have hefted
a sliver of uru that broke off of Mjolnir in that story, transforming himself into the
tiny Frog of Thunder, Throg.
Jarnbjorn, the Iron Bear
Thor wasn't always worthy enough to lift Mjolnir, and during his centuries as a hot-headed,
arrogant brawler, he had another weapon of choice when it was time to go bust up some
frost giants: an axe named Jarnbjorn.
Norwegian for "Iron Bear," the name is fitting - it's a weapon that's almost as tough
as Mjolnir.
And it's a good thing, too.
When Thor doubted his own worthiness and found himself unable to lift it, Mjolnir found a
new wielder in the form of a mysterious female Thor.
The Odinson took up Jarnbjorn once again, because to a man without a hammer, every problem
looks like you could probably solve it with an axe.
Ultimate Mjolnir
In terms of visuals, the MCU's version of Stormbreaker doesn't quite resemble Beta Ray
Bill's hammer, although it has the same basic shape.
And they call it an axe but whatever… same difference.
Anyway, it bears a striking resemblance to the version of Mjolnir carried by the Thor
of the Ultimate Universe.
If you're not familiar with it, Ultimate Marvel was a publishing imprint that kicked off in
2000 with a more cinematic style, but the characters didn't take long to diverge pretty
wildly from their core-universe counterparts.
With Thor, readers were initially meant to be unsure of whether he was a mythical god
brought to Earth or a delusional but extremely handsome mental patient.
Either way, his suit and hammer were technological, not magical… at first.
Eventually, his godhood was confirmed, and it was revealed that the techno-Mjolnir he'd
carried was designed to look like his memories of his actual godly hammer.
The Ultimate Universe was eventually destroyed, but the hammer found its way to the core Marvel
Universe, where it wound up in the hands of the extremely unlikely Volstagg the Voluminous,
who was transformed into "War Thor."
The cinematic Stormbreaker
Thor's quest for a new hammer is a major plot point in Infinity War, and it lifts a lot
from the comics.
In this version, Nidavellir is a forge in space orbiting a dying star, and the hammer
forged by Eitri is basically an upgraded version of Mjolnir.
In addition to the usual flying and smashing, it also gives Thor the ability to control
the Bifrost, which was previously a property of only Heimdall's sword.
There's one more really cool thing about the MCU's Stormbreaker, though.
In a representation of the disparate parts of the MCU coming together for Infinity War,
the hammer is literally built from pieces of the Avengers and the Guardians of the Galaxy.
While the heads were forged from uru in Nidavellir, they were joined by a handle that was made
from Groot's arm, bringing everything together.

I think my favorite thing about OpenClassrooms is the fact that they are really people oriented
and they really care about you. I think a way of seeing that is the mentoring program. I
think my mentor has definitely made a huge impact in my life. She doesn't only focuse on
the fact that I am doing things technically correct in terms of theory and in terms of
coding but also in the fact that I am okay as a person and I think the whole team at
OpenClassrooms is really focused on that which makes you feel taken care of.
They have great courses that teach you the theory but the fact that you have projects
makes you realise that all the knowledge you have it's actually appliable into something
which I think prepares you for the work out there and it's really nice to come out of
your career with a portfolio already to show which I think is not something that you find
often and it's something I've cherished a lot throughout this career. So basically the
way the mentoring process works is you meet every week with a particular mentor that helps
you throughout your projects I think technology is a career that can get very stressful from
time to time I think you can get very stuck in something and if you don't have
somebody there to kind of like hold your hand and be like "you got this", it can become a little
frustrating.
I think that's what my mentor has done for me.
Being able to push me and make sure I reach my full potential.
It's nice to have somebody looking out for you and caring for you and it makes you want
to care for yourself a little bit more I think.
Before I came into OpenClassrooms I think I was a person that was very away from technology.
I was really into art, I was really into languages.
I was everything that you would not think of when you see programming but I found the
challenge and I liked it.
I think I found this whole thing by a coincidence and stayed by choice and I think it's the
best choice I've made so far.

We had fun teaching the Golden Knights
how to do some circus stuff, a little bit.
Yeah, it was awesome. We got to play around with the whole entire team
and show them all the different apparatuses and skills
that you can learn here at Cirque du Soleil
and what we have trained on our entire careers to get where we are today.
I think all the activities that we chose are ones that can be,
you know, easily picked up.
And from there, they've just kind of build on them.
If they feel confident, they can go to the next level of that skill.
So we had guys standing on each other's shoulders
and doing stacking and things of that nature.
We also did a little bit of Russian bar, which does a lot of balancing
and teamwork and that sort of thing.
We helped the players with hand-to-hand and pyramid.
Yeah, we helped the Knights work on a lot of partner balance and partner acrobatics.
We were able to show them how a lot of teamwork is incorporated
in a lot of the things that we do here at Cirque.
And they were fantastic, just naturally strong and able to do pretty much anything.
The stuff they do is pretty crazy and takes a lot of practice to do.
Yeah, I did the juggle part but it's not easy.
Obviously, when you look at it, it looks simple
but when you start doing it, you can't do it. It's a lot of practice.
I didn't think we were going to do that.
I thought it was kind of just a little workout and,
you know, see them do it.
And to be able to participate, it was pretty neat.
It's been great. The guys have really taken what we've offered them.
They've showed some guts to get everything done.
It's easy to work with professional athletes.
They know how to move their bodies, you know?
And so, they took instruction real well.
They had a good time. And it was easy to see.

Well anal squad PD, maybe these are all in my head
because it's the only way I can process
the drama I'm currently experiencing.
Anyways, I'm like totally obsessed with finding
a way to kill my captor, Jonathan.
I just haven't found a way yet.
Until then, I'm like totally obsessed
with finding things in this dungeon.
I consider it my own personal shopping mall.
So I made a haul video, let's see what I found.
So you know I can't stop thinking about rat tails,
they're all over this dungeon and I've been wanting
one for a really long time but I wanted
one that felt like me, you know?
And I knew I wanted a rat's tail, not a mouse's tail
and I finally found the perfect one.
I got this tail off a rat I call, Poncho.
It's a little pink, it's a little gray,
I can wear it as a choker, I can use it to put my hair up
and when I'm hungry which is like 24/7, 365,
I can chew on it to get a little protein.
(chewing)
So cute.
Numero dos.
Ever since I woke up in this dungeon, I've been totally
obsessed with the fingernails in here.
They are so adorable.
Every picture tells a story but I say,
every fingernail tells more stories.
When I first saw this fingernail, I was like
someone else was held prisoner down here
and tried to claw their way out
and I love that shade of pink!
Obsessed.
When I have down time, which is always, I just play
with these fingernails, use them as body art, as earrings,
as barrettes or wondering how many other girls
died in this dungeon.
So many questions.
Finally, I got this vintage spoon.
I found it in a hole in the wall, so random.
And at first I thought, I must be loved and then I thought,
I could use this as a weapon to kill
my captor, Jonathan and end my suffering.
But how?

Although Garcia Johnson's mom may not be as instantly recognizable as her dad, she's a
total power player in Hollywood.
In addition to being the co-founder and co-CEO of Seven Bucks Productions, Dany Garcia has
also been The Rock's manager since 2008 and is largely credited with his massive success.
Oh, and she's also his ex-wife.
Marie Claire reported that she's "responsible for his multimillion-dollar enterprise" and
his becoming the world's highest paid actor in 2016.
Speaking of her decision to leave a successful career on Wall Street in order to manage her
ex full-time, Garcia admitted,
"I had to become very comfortable, very quickly, with creating a new paradigm: 'Yes, I am his
manager.
Yes, we were once married.
Now, let's go build s--- together.'"
Big sis
When Garcia Johnson was 14, she became an older sister for the first time, as her dad
and his longtime girlfriend, singer-songwriter Lauren Hashian, welcomed their first child,
daughter Jasmine, in December 2015.
Fast forward to April 2018 and the pair's newest addition, daughter Tiana Gia, made
Garcia Johnson a sister, times two.
The proud papa joked,
"Once again, big daddy is completely surrounded by beautiful estrogen and loving, powerful
female mana.
[...] I wouldn't have it any other way."
Model millennial
Garcia Johnson signed with IMG Models in 2016.
While she is currently listed under 'Development' via the agency's site, her portfolio features
everything from high fashion to streetwear.
But she's clearly already a natural at owning her moment.
For her 16th birthday, Garcia Johnson learned that The Hollywood Foreign Press had chosen
her to be the first-ever Golden Globes Ambassador for the awards' 75th anniversary.
"The 2018 Golden Globes Ambassador, Simone Garcia Johnson."
While the title had previously been "Miss Golden Globe," the year-long role has since
been updated to reflect the organization's philanthropic efforts.
Garcia Johnson told E! News,
"I'm really happy that the Hollywood Foreign Press chose to make this changes because it's
more inclusive and it promotes equality and I feel strongly about those things."
As part of her duties as Golden Globes Ambassador, Garcia Johnson chose GlobalGirl Media to partner
with, throughout her tenure, saying,
"They're an incredible organization.
[...] They empower young women through digital journalism, and they give them all the tools
they need to get their voice heard."
Social media hot seat
Garcia Johnson hopes to inspire people to speak up, something she herself has been doing
on Instagram.
But she admitted to W,
"I've definitely gotten some backlash over certain things, but you can't please everyone.
I'll read the comments sometimes, but I tend to focus more on the positive ones."
And just what causes are personal to her?
She told Teen Vogue,
"I just support equality 110 percent.
[...] Black Lives Matter, trans rights, or women's rights."
She also advocates for body positivity, and supports the Times Up movement, having posted
in January 2018, "The clock's been ticking on the abuse of power.
I stand in solidarity with women across every industry to say TIMES UP on abuse, harassment,
and assault."
In it to win it
Having grown up with a wrestling legend father, it's no surprise that Garcia Johnson has massive
respect for the sport.
She told The Hollywood Reporter in 2017,
"There's just a certain amount of passion that every move and match requires, and that's
so admirable.
It's definitely something I've thought about and want to pursue."
Laying out her goals, the teen went on to reveal,
"As much as I love and admire the film industry, I don't see myself pursuing a career in it
at the moment.
I plan to study business in college — NYU, hopefully — and after graduating, I want
to pursue wrestling and eventually transition into talent management."
With all those goals she's likely to crush, there's no doubt you can already smell what
the Rock mini-me is cooking.

you have updated your resume, you've applied everywhere online, you've tried
to network and you've basically done everything you could to try to increase
your chances of getting interviews and therefore a job offer.
However, throughout this whole process you've been noticing that there's been
this little voice murmuring in the back of your mind
and it's been saying things like "you don't have enough experience" or "you have
too much experience" you're overqualified. I see this all the time and I read
comments from people that say "I can't get my foot in the door because I need
to have a job to get a job" or "they don't value my years of work experience and
they're just looking for someone who's younger more energetic and cheaper than
me". Now I know it's easy to focus on the negative but what about when you focus
on the people who you know who were in similar situations as you they were
either also under qualified or overqualified but they ended up
successfully getting job offers. They clearly did something that you aren't
doing so now let's channel your energy and let's focus it in a way where we're
gonna learn and you're gonna implement my key strategy on how you can get your
next job offer regardless of whether you have a lot of experience or very little
experience. And that key strategy can easily be summed up in one word and that
word is focus focusing means when either you are writing your resume or you're
selling yourself in interviews that you are honing in on the key aspects of the
position that you have that are happen to be relevant for the role as well so
that means your key skills technical qualifications experience or knowledge
anything that is related to the role that you have that the role is asking
for you need to focus in on those key aspects this is actually
one of the concepts that I teach in my course top-notch resume which is an
online self-study course which has been super effective in helping professionals
whether they had little experience or tons of experience in not only landing
interviews but successfully getting job offers by rewriting their resume using
my approach so let's say you're someone who has very little work experience and
you consider yourself under qualified for any job that you want to apply to
but at the same time you want to be a marketing professional if you've
recently graduated and you want to be in a marketing position for your next job I
assume that in your undergrad or college program you studied some aspects of
marketing so you want to hone in on the key concepts that you learned in that
program related to marketing and make sure that you highlight them on your
resume so think of the key concepts that you might have studied that would be
relevant for this position for example maybe you studied the three P's product
pricing and place or you studied digital social media marketing or perhaps you
studied marketing concepts such as marketing mix target market and any
other relevant marketing concepts so what I'm trying to say is just because
you don't have the exact marketing experience it doesn't mean that you
can't include the knowledge that you've gained through your education on your
resume and in your interviews to help you sell yourself so that is why it is
important for you to focus on those key concepts and making sure that they are
relevant to the position the same concept applies if you happen to be
overqualified for certain positions and again this concept is in top-notch
resume which if you're curious about it you can go down to the link in the
description box after the video but if you're actually an experienced
professional with many years of experience and you're wondering and
having trouble with cutting things down to make them more concise that is
actually a great problem to have instead of having to wrack your brain trying to
remember the knowledge and the concepts that you learned back in school as
you're less experienced counterparts are having to do you merely have to pick and
choose the exact relevant experiences that are a perfect
for the position that you're applying to and the way you'll do this is by
focusing in on the keywords on the job description that are important for the
employer and making sure that they are mapped onto your resume and are
discussed in your interviews so remember the key strategy is to focus focusing
your experiences and your knowledge onto your resume and in your interviews is
what's going to attract employers to you and eventually make them want to hire
you and I thought that it would be fun to end things off with a bit of an

"It is during our darkest moments that we must focus to see the light" now if you

VEGAN GENERAL TSO'S 'CHICKEN' RECIPE (gluten-free) | Mary's Test Kitchen - Duration: 10:11.Hello friends and not yet friends,
Last week, I showed you how to make the best vegan fried chicken ever.
And now we're using that amazingly juicy, crispy crunchy vegan protein to make a vegan
take on General Tso's chicken; a spicy, aromatic, sweet and sour dish with roots in Hunan, China,
Taiwan and New York City.
I've been meaning to make this dish since a bunch of you asked me to veganize this Chinese
American restaurant favourite.

Starting with the best vegan fried chicken, this time I'll show you the oven fried method
more clearly since we kind of skipped over it last week.
If you want use another vegan chicken alternative for your General Tso's, check the description
for the timestamp to skip ahead.
We start with medium firm tofu.
Not firm tofu.
But tofu with medium firmness.
It's also sold as traditional tofu.
Do not open the package, but stick it straight in the freezer and freeze it solid.
The water that is in the tofu will crystallize and expand creating little pockets within.
After it's solid, take it out of the freezer but don't open the package.
Let it thaw.
I speed things up by letting it thaw on the counter for about four hours, until it is
still partly frozen and the outside of the package is still very cold to the touch.
Don't let it thaw all the way on the counter.
It would be too easy to leave it out too long and that's not food safe, my friends.
Let it finish thawing in the fridge, perhaps in the crisper or the door which is usually
the least cold place in the fridge.
When the tofu is completely thawed, put it back in the freezer.
This second freeze seems to help the tofu become a bit more sturdy.
If you press it before freezing it a second time, it will fall apart more easily when
you try to press it and you won't get the same texture we're going for.
You guys also asked me if you can use firm or extra firm tofu.
And of course the answer is: there are no rules.
But if you want to make the realistic, flaky, meat-like texture, stick the medium or traditional
tofu.
Firm or extra firm tofu turns spongy and grainy after freezing.
Smooth tofu has a layered effect when you freeze it.
But it's hard to press the water out; it tends to get smooshy.
I've tried it here, and it looks okay, but the texture is too soft and spongy.
It tastes strongly of tofu because it couldn't get dry enough before getting soaked in broth.
After your medium or traditional tofu has thawed for the second time, you can open the
package, drain out the water, and gently press it.
Again, I'm using the tofu mold for this job.
You can use a tofu press if you have one, or you can use two cutting boards.
Press them together over the sink or a large bowl and the tofu should compress easily and
the water should gush out.
Watch it though, don't squish it so hard that you break and smoosh the tofu.
Afterwards you can break it up into chunks.
Coat lightly in seasoned flour.
Like last week, I'm using a gluten-free one-to-one baking blend.
This particular blend creates a very nice crunchy crispy texture.
Regular all-purpose flour is heavier than this gluten-free blend.
You can lighten all-purpose flour by replacing a quarter cup with potato starch or cornstarch.
Still, after testing a few different gluten-full and gluten-free blends, I still recommend
this one.
As always, the recipe is on Mary's test kitchen.com and I encourage you to read it through from
start to finish before starting.
That's a good way to ensure success when following any recipe actually.
Next the vegan egg wash.
I'm using follow your heart's vegan egg powder and cold water.
Can you use other vegan egg alternatives?
Yes, but this is the one that tested the best.
Flax egg also works but it's not as good.
The result isn't as crunchy.
Finally, roll in the seasoned flour again, this time with rice crispies added for extra
crunch.
It will be a messy situation, can't be helped.
Now we could deep-fry these but this time we're going to oven fry.
Spray these with a little bit of oil for a lighter alternative, but I'm going to go with
a generous amount of oil.
This will help us get a very crunchy exterior that will hold up against our tasty General
Tso's sauce.
Bake these in a preheated 425°F oven for 30 to 35 minutes, flipping the pieces over
half way.
And now would be a good time to start cooking your jasmine rice and prepping the other ingredients.
Take them out when they are a nice deep golden brown.
Let those cool on a rack or a bed of paper towels.
Let's get to the rest of our ingredients.
I'm using semi-dried chilies; fresh ones that had been in the fridge drying out.
They're going to be hot.
Dried chilies aren't as spicy hot but are more fragrant.
Use what you have and take out the seeds if you want something more mild.
Veggies are not typically mixed into this dish but why not make this a one wok kinda
meal.
I love peppers for their colour, white onion for the sweetness, and broccoli so I can pretend
I'm a giant eating trees for dinner.
Our sauce consists of chicken-style vegan broth, light soy sauce, Shao Xing wine to
add fragrance and don't worry if you can't handle alcohol, I can't either.
It'll get cooked off.
Skip it if you just don't want to use wine though.
Add regular white vinegar, brown sugar, and a bit of cornstarch.
I've had some variations on General Tso's which are more sour or more sweet or more
salty; this one is more balanced.
If you want any of these aspects to be stronger, feel free to taste and adjust.
Also, I swear some taste like they have ketchup.
Feel free to add some; I'm not going to but this is your General Tso's and there are no
rules.
Mix it well and let's go to the stove.
Get your wok or large skillet nice and hot over medium heat with a couple teaspoons of
cooking oil.
As usual, I'm using canola.
Peanut oil is another good choice for handling high heat and adds a little flavour too.
Don't use your good olive oil for this.
When your oil is hot and shimmering, add the aromatics: garlic, ginger, red chilies, and
green onion whites.
Save the dark green parts for later.
They will become nice and fragrant in a minute or less.
Add your veggies if you're using them and turn the heat up a little as you stir fry
for half a minute to a minute.
Just until the veggies turn bright.
We're not cooking them all the way yet.
Give the sauce a little mix to kick up the starch and pour it in.
It'll start bubbling and get thick pretty fast.
When it does, add your vegan oven-fried chicken.
It occurs to me now that I should have made these nuggets smaller for this dish.
And I really need to get a proper wok spatula.
But before you can give either of these things much thought, your vegan General Tso's chicken
is done and just about ready to eat.
Just add the dark green onion parts.
Serve on fragrant white rice and sprinkle with some sesame seeds.
And that's a bowl calling out to be devoured.
The sauce coats everything perfectly, not too much or too goopy, just enough to cling
to every surface with savory, aromatic flavour; spicy, sweet, a little tangy.
I love the colour, the abundance of veggies makes this a joy to eat.
And the vegan chicken still has some crispy crunchiness wrapping around a tender juicy
interior.
You can't taste the beany flavour of tofu at all.
If you ever liked General Tso's, you're going to love this!
